Description
This 3 ingredient sugar cookie recipe is quick, buttery, and always turns out perfectly soft inside with crisp edges.
Ingredients
1 cup butter, room temperature
2/3 cup + 3 tablespoons granulated sugar, divided
2 cups + 1 tablespoon all-purpose flour, spooned and leveled
1 teaspoon vanilla (optional)
Rainbow sprinkles or nonpareils (optional)
Instructions
1. Preheat oven to 325°F. Line 2 large baking sheets with parchment paper.
2. Beat butter and 2/3 cup sugar with an electric mixer until combined.
3. Blend in flour and vanilla if using.
4. Check dough for smoothness and knead if crumbly.
5. Scoop 1-inch balls of dough, knead and roll until smooth.
6. Roll in remaining sugar and place on baking sheets.
7. Flatten with a glass to about 3/16 inch thick.
8. Add sprinkles if using and lightly press to set.
9. Bake for 14–16 minutes until edges are lightly golden.
10. Cool on baking sheet for at least 10 minutes before moving.
Notes
Dough should feel soft and smooth before baking.
Use a cookie scoop for even sizes.
Do not skip cooling on the baking sheet after baking.
