Description

Blueberry cookies made with frozen blueberries and white chocolate chips. Soft centers, lightly golden edges, and vibrant berry flavor.


Ingredients

Scale

135 grams all purpose flour

1/2 tsp baking powder

1/8 tsp salt

76 grams unsalted vegan butter softened

90 grams granulated sugar

80 grams frozen blueberries thawed

70 grams white chocolate chips chopped


Instructions

1. Preheat oven to 400F.

2. Whisk together flour baking powder and salt in a small bowl.

3. Thaw frozen blueberries until soft and jammy then let cool for 2 to 3 minutes.

4. Cream butter and sugar until light and fluffy.

5. Add blueberries and beat until fully mashed and combined into a deep purple mixture.

6. Gradually fold in dry ingredients until just combined.

7. Stir in white chocolate chips.

8. Chill dough in freezer for 30 minutes.

9. Shape into 12 balls and place on lined baking sheet.

10. Bake 10 to 13 minutes until edges turn lightly golden.

11. Cool 5 to 10 minutes before serving.

Notes

Chill dough to prevent spreading.

Allow blueberries to cool before mixing.

Do not overmix after adding flour.

Bake slightly longer if you prefer firmer cookies.
