How This Recipe Came to Life
A Dessert That Started With Curiosity
This cookie pie came from the urge to try something a little different. I wasn’t after a classic cookie or a traditional pie. I wanted something with layers, something that combined different textures in one easy-to-make dessert. I had a jar of pistachio crème, a package of kataifi, and a habit of always keeping chocolate chips on hand. What came out of the oven turned into one of my favorite comfort desserts.
Why This Pie Is Dubai Style
“Dubai style” here means luxurious layers and flavors inspired by Middle Eastern ingredients. Pistachio spread plays a key role, offering both richness and color. Kataifi dough, often found in pastries like kunafa, adds a signature crisp texture. Combined with classic cookie dough and soft chocolate chips, the result feels indulgent, creative, and deeply satisfying.

The Ingredients That Make This Pie Special
Building a Soft but Structured Cookie Dough
Start with 200 grams of softened unsalted butter and 250 grams of light brown sugar. Beat until creamy and smooth. Add one large egg and a teaspoon of vanilla extract, then mix again. This creates a moist and flavorful dough base.
Sift in 320 grams of plain flour and half a teaspoon of bicarbonate of soda. Mix until just combined. Fold in 200 grams of chocolate chips, making sure they’re evenly distributed. Divide the dough in half, setting one portion aside for the top.
Creating the Pistachio and Kataifi Layers
Press the first half of the cookie dough into a greased and lined 23cm springform pan, making sure it climbs a little up the sides.
Next, spread 300 to 350 grams of pistachio crème evenly over the dough, leaving a small border at the edges. In a separate pan, toast 130 grams of kataifi in 10 grams of butter until golden and lightly crisp. Sprinkle it on top of the pistachio and gently press down.
Top everything with the remaining dough by breaking it into chunks and gently patching over the kataifi. Finish with a handful of extra chocolate chips on top.
Baking and Serving Dubai Style Chocolate Cookie Pie
Getting the Bake Just Right
Preheat your oven to 180°C, or 160°C if using a fan oven. Bake the cookie pie for 22 to 28 minutes, until the top is golden and slightly set. The center should feel soft, as it will continue to cook slightly as it cools.
Allow it to cool in the tin for about 10 to 15 minutes before slicing. This gives the filling time to set without losing its gooey middle.
Serving Tips and Variations
Serve warm with vanilla or pistachio ice cream. You can also drizzle dark chocolate or scatter crushed pistachios on top for an extra hit of flavor.
If you’re storing leftovers, keep them covered at room temperature for up to two days. Reheat slices in the oven for about five minutes to refresh the texture. You can also freeze individual portions and reheat straight from the freezer when a craving hits.
