Description
One-skillet honey BBQ chicken rice made with pantry staples, sweet and smoky flavor, and perfect for weeknight dinners.
Ingredients
1 lb boneless, skinless chicken thighs or breasts
1 cup long-grain rice
2 cups chicken broth
1/2 cup BBQ sauce (your choice)
1/4 cup honey
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
Salt and pepper, to taste
1 cup mixed vegetables (frozen or fresh)
Chopped green onions or parsley (optional)
Instructions
1. Heat a large skillet or deep pan over medium heat. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear for 3–4 minutes per side. Remove and set aside.
2. Toast the uncooked rice in the same pan for 1–2 minutes.
3. Add chicken broth, BBQ sauce, and honey. Stir well.
4. Return chicken to the pan, cover, and simmer for 15 minutes on low heat.
5. Add vegetables on top, cover, and cook 5 more minutes until rice is tender and chicken is cooked through.
6. Remove from heat and let rest for 5 minutes before serving. Garnish if desired.
Notes
Use long-grain rice for the best texture. Short-grain rice may become mushy.
Adjust sweetness by using more or less honey.
Use a smoky BBQ sauce for deeper flavor.
Substitute with tofu or chickpeas for a meatless version.
