A crispy, sweet, and slightly spicy hot honey chicken bowl made with simple ingredients and bold flavor.
Ingredients
1 ½ lb chicken thighs, cut into bite-sized pieces
½ cup buttermilk
½ teaspoon salt
1 cup panko
¼ cup whole wheat flour
1 tablespoon paprika
1 tablespoon Italian seasoning
Cooking spray oil
½ cup honey
1 teaspoon sriracha
¼ cup mayonnaise
3 cups cooked rice
3 cups coleslaw
Sweet pickles
Instructions
1. Mix chicken, buttermilk, and salt and marinate for 20 minutes
2. Preheat oven to 425°F and prepare coating mixture
3. Coat chicken pieces in panko mixture
4. Bake chicken for 25 minutes until crispy
5. Mix honey and sriracha, prepare hot honey mayo
6. Brush chicken with hot honey and assemble bowls with rice, slaw, and pickles
Notes
Use chicken thighs for juicier results
Substitute buttermilk with milk and lemon juice if needed
Do not overcrowd the baking tray
Adjust spice level to taste
