Description

Mango Curry Chicken Salad combines tender rotisserie chicken, sweet mango, crisp celery, crunchy cashews, and a creamy honey mustard curry dressing. Serve it chilled in naan flatbreads, wraps, sandwiches, or lettuce cups for an easy lunch or light dinner.


Ingredients

1 small rotisserie chicken, meat removed and shredded

1 to 2 tablespoons reserved rotisserie chicken juices, optional

1/2 cup honey mustard

1/2 cup mayonnaise or plain Greek yogurt

1/2 cup chopped fresh or dried mango

1 tablespoon curry powder

2 celery ribs, chopped

1/2 cup cashews, chopped

Naan flatbreads, for serving


Instructions

1. Remove the meat from the rotisserie chicken and shred it into bite-sized pieces

2. Place the shredded chicken in a large mixing bowl

3. Add 1 to 2 tablespoons of reserved chicken juices for extra moisture, if desired

4. Chop the celery, cashews, and fresh or dried mango into small pieces

5. Add the celery, cashews, and mango to the bowl with the chicken

6. Add the honey mustard, mayonnaise or Greek yogurt, and curry powder

7. Stir gently until the dressing evenly coats the chicken and other ingredients

8. Taste and adjust the curry powder or dressing as needed

9. Cover and chill for 30 minutes, or serve immediately

10. Spoon the chicken salad into naan flatbreads and serve

Notes

Use plain Greek yogurt for a lighter, tangier dressing

Use mayonnaise for a richer and creamier texture

Choose slightly firm fresh mango so the pieces hold their shape

Chop dried mango into small pieces for even sweetness

Toast the cashews in a dry skillet for 3 to 5 minutes for deeper flavor

Store leftovers in an airtight container in the refrigerator for up to 3 days
