Description

Mexican white trash casserole is a creamy, cheesy baked dish made with shredded chicken, Doritos, and bold seasoning. Perfect for an easy family dinner.


Ingredients

Scale

1 (10-ounce) bag Nacho Cheese Doritos, crushed

2 cups cooked shredded chicken

2 cups shredded cheese (cheddar or Mexican blend)

1 (10.5-ounce) can cream of chicken soup

1 (10-ounce) can Rotel diced tomatoes with green chilies

1/2 cup sour cream

1/2 cup milk

1 tablespoon taco seasoning

Nonstick cooking spray

Optional: extra shredded cheese for topping


Instructions

1. Preheat oven to 350°F (175°C) and grease a casserole dish

2. In a large bowl mix chicken, soup, Rotel, sour cream, milk, taco seasoning, and 1½ cups cheese

3. Spread half of crushed Doritos in the dish

4. Add half of the chicken mixture and spread evenly

5. Repeat layers with remaining Doritos and mixture

6. Top with remaining cheese

7. Cover with foil and bake for 35 minutes

8. Let rest 5–10 minutes before serving

Notes

Use gluten-free soup and chips for a gluten-free version

Adjust spice level with mild or hot Rotel

Do not crush chips too finely for better texture
